Can you pick certain clients to require a deposit or full payment?

It's not possible to have patient-specific Online Booking Payment Policies. Service-specific and clinic-wide Online Booking Payment Policies exist.

Is there a way to charge a percentage for a deposit instead of a flat fee?

Noterro does not currently support charging a percentage-based deposit for appointments. You can only set a flat fee for deposits.
