No, it is not possible to select only one therapist for double booking. When double booking is enabled, it is applied to all practitioners a clinic.

I want to be able to double book with online scheduling-?

Patients will not be able to double book appointments within Online Booking, however you can double book patients from the staff side.

You can enable double booking, but it can’t be limited to specific times or days.

Does the calendar only show schedule conflicts once availability has been set?

Noterro does not need a calendar schedule to detect appointment conflicts. The only time a conflict in appointments will not appear when booking a Patient is if the clinic has double-booking mode enabled.
